Sometimes (and by sometimes I mean all the time) you need a good cookie to grab when that sweet tooth hits. Thankfully these cookies are a lot healthier than the store bought ones filled with sugar and processed ingredients. They are completely vegan and can be gluten free as well if gluten free oats are used. They are also raw meaning there is no baking required, you just melt the ingredients, mix together, roll into balls and store in the fridge or freezer. HOW PERFECT!
Now let’s make some cookies….
1 cup rolled oats (use GF if needed)
1/2 cup natural peanut butter
1/4 cup cocoa powder
1/2 cup shredded coconut
4 tbsp hemp seeds
2 tbsp coconut oil
1/2 cup maple syrup
pinch of Himalayan salt
1 tsp vanilla extract
pinch of cinnamon
Melt coconut oil and combine with peanut butter, vanilla and maple syrup.
Combine all of the dry ingredients together and pour the liquid into the dry ingredients.
Stir together until well combined and roll into small balls
flatten out on a cookie sheet until desired size and store in the freezer for 10 minutes to set
Keep in the fridge for up to a week or store in the freezer for longer.
