Vegan Blueberry Ginger Protein Waffles

I am so excited for this recipe to finally be perfected, took three days of eating waffles to get the recipe just right but I enjoyed every second of it :)


This was my first time using @unicornsuperfoods Ocean Blend Blue spirulina powder in a recipe and I absolutely loved it, not just for the bright blue colour but for the incredible health benefits it has. Paired with ginger, blueberries and vanilla protein, these waffles have everything you could ever want.

These waffles are packed full of protein and fibre making them a perfect post workout meal or breakfast option to keep you full and energized throughout your day, it’s so easy to make meals such as pancakes and waffles healthier with simple, wholesome ingredient swaps so you can enjoy the foods you love on a daily basis while on a plant based diet.


Now to the recipe….

You will need

  • 1 ripe mashed banana

  • 1 cup oat flour (you can grind your own rolled oats at home for a cheaper option)

  • 1 & 1/4 cup unsweetened almond milk (I used my homemade almond milk but any plant based milk works)

  • 1 tsp baking powder

  • 1/4 tsp ginger powder

  • 1 tsp @unicornsuperfoods ocean blend powder (optional)

  • 1/4 cup frozen blueberries

  • 1 scoop vegan vanilla plant based protein (I use the Juice Plus Complete protein)


  1. Place all ingredients into a high speed blender except the blueberries (I used a Vitamix blender)

  2. Blend until a smooth batter forms, it should be pretty thick, feel free to adjust the consistency by adding in more milk or oat flour to your liking

  3. Preheat your waffle iron (I used a non-stick iron, you may need to add some oil if your iron isn’t non-stick)

  4. Once the batter is blended, stir through the frozen blueberries

  5. Pour the batter into your waffle iron and cook for roughly 3-5 minutes depending on yo0ur waffle iron

  6. This recipe makes 2-3 waffles depending on the size, for me this was 1 serving, adjust to suit your serving size

  7. Enjoy with some warmed up frozen berries, maple syrup, nut butter or any of your other favourite waffle toppings
